  • Mix the salmon, pepper, lemon rind and crème fraîche in a bowl, cover with cling film.
  • Refrigerate for a couple of hours if possible and ideally overnight.
  • Avocado Salsa
  • Place the chopped radish and cucumber in a bowl.
  • Add the pepper and lemon juice
  • Peel the Avocado and remove the stone.
  • Add the Avocado to the bowl and mash to preferred consistency. Some people like it really sommoth, others like a bite of bite to it.
  • If the prawns are raw - simply stir fry and chill.
  • These are nicely served in a glass. Start with the smoked salmon, add the avocado salsa and top with the prawns.
