Sweet Potato & Onion Soup

Sweet Potato & Onion Soup recipe for a healthy weight loss.

Ingredients
  • 2 tbsp Rapeseed Oil
  • 2 lbs sweet potatoes, diced
  • 1 carrot, diced
  • 2 onions, sliced
  • 2 garlic cloves, crushed
  • 1 pint vegetable stock
  • ½ pint unsweetened orange juice
  • 1 cup fate free natural yoghurt
  • 2 tbsp chopped fresh coriander
  • Salt & pepper
Instructions
  1. To garnish Coriander sprigs Orange rind Heat the oil in a large saucepan & add the diced sweet potatoes and carrot, sliced onions and garlic. Saute the vegetables together gently for 5 minutes, stirring constantly.
  2. Pour in the vegetable stock & orange juice & bring them to the boil.
  3. Reduce the heat to a simmer, cover the saucepan & cook the vegetables for 20 minutes or until the sweet potato & carrot cubes are tender.
  4. Transfer the mixture to a food processor or blender in batches and process for 1 minute until pureed. Return the puree to the rinsed out saucepan.
  5. Stir in the yoghurt & chopped coriander & season to taste.
  6. Serve and garnish with the coriander sprigs & orange rind.
