Stuffed Chicken and Parma Ham Fillets

Stuffed Chicken and Parma Ham Fillets with cream cheese, are easier to make than you might otherwise think!

Ingredients
  • 3 Chicken Fillet Breasts
  • 1 tbsp Light or Extra light Cream Cheese
  • 1/2 cup Finely Chopped Chives
  • 1/2 tsp Chilli Flakes
  • 1 pinch Ground Black Pepper
  • 6 Slices Parma ham
Instructions
  1. Preheat the oven to 180° Mix the cheese, chives, chilli flakes, black pepper in a bowl
  2. Make an incision down the middle of the chicken. You could also tenderise the chicken, by placing it in a food saver bag - pounding it with a rolling pin - and then opening it in to a butterfly shape. Whichever way - it will be tasty!
  3. Fill each portion of chicken with the cheese mix - being careful not to overfill!
  4. It depends on the size of the Parma Ham slices. Each portion may take 2 slices or you may prefer to use less! Place on a baking sheet.
  5. Cook for 35 - 40 minutes or until chicken is cooked through.
