Potato & Bean Paté

Potato & Bean Paté is a lovely homemade dip for a seasonal party! Or just an excuse for one!

Ingredients
  • 3 1/2 oz Maris Piper potatoes
  • 8 oz Can Mixed Beans
  • 1 Garlic Clove crushed
  • 2 tsp Lime Juice
  • 1 tbsp Freshly Chopped Coriander (Save some for garnish)
  • 2 tbsp Fat Free Yoghurt
  • 1 pinch Sea salt
  • 1 pinch Ground Black Pepper
Instructions
  1. Cook potatoes in a saucepan of boiling water for 10 mins until tender. Drain well & mash.
  2. Transfer the potato to a food processor/blender & add the beans, lime juice & fresh coriander.
  3. Season the mixture with salt & pepper & process for 1 minute to make a purée
  4. Alternatively, for chunkier pate, mix the beans with the potato, garlic, lime juice, coriander & mash with a fork.
  5. Turn out into a bowl & add the yoghurt. Mix well & season further to taste.
  6. Spoon into a serving dish & serve on Melba toasts
