Pancakes and Fruit

Pancakes and Fruit from the healthy breakfast 7 Meals Ideas! These are made with couscous and taste great! Don't forget, couscous is free in Slim R Us! If you have these pancakes for breakfast, you still have your bread or cereal allowance available to you!

Ingredients
  • 30 g Uncooked Couscous
  • 1 Tub Fat Free Yoghurt
  • 3 Eggs
  • 2 pinch Icing Sugar to garnish
  • 2 tbsp Fresh Fruit to serve
  • 2 tsp Rapeseed Oil (Optional)
Instructions
  1. This pancake batter is prepared the night before.
  2. Mix the couscous with the yoghurt. Add 3 beaten eggs. Stir and cover - refridgerate overnight
  3. Remove from the fridge.
  4. Heat a non stick pan. If none available, add the oil
  5. Spoon small portions of batter on to the pan. Do not be tempted to make a larger pancake, as the pancake will break up if it is too big,
  6. Turn after 2 minutes or when browned on the underside.
  7. Serve with a portion of fruit & a dollop of yoghurt. Sprinkle the optional icing sugar.
