Pancakes and Fruit
Pancakes and Fruit from the healthy breakfast 7 Meals Ideas! These are made with couscous and taste great!

Ingredients

Uncooked Couscous

Tub Fat Free Yoghurt

Eggs

pinch
Icing Sugar to garnish

Fresh Fruit to serve

Rapeseed Oil
(Optional)
Instructions

This pancake batter is prepared the night before.

Mix the couscous with the yoghurt. Add 3 beaten eggs. Stir and cover - refridgerate overnight

Remove from the fridge.

Heat a non stick pan. If none available, add the oil

Spoon small portions of batter on to the pan. Do not be tempted to make a larger pancake, as the pancake will break up if it is too big,

Turn after 2 minutes or when browned on the underside.

Serve with a portion of fruit & a dollop of yoghurt. Sprinkle the optional icing sugar.
