  • Heat the oil in a large saucepan & add the onion, potato, carrot & leek. Sate for a couple of minutes, stirring until the veggies are soft.
  • Add the chilli & garlic & cook for another minute.
  • Stir in the ground coriander, chilli powder & vegetable stock.
  • Bring the soup to the boil, reduce the heat & cook for another 20 minutes until the vegetables are tender.
  • Stir in the beans, season well with salt & pepper & cook for another 10 minutes, stirring occasionally.
