Herb and Lime Baked Fish with roasted vegetables. Or, choose any white fish such as Cod or Hake.
- Preheat the oven to 180° Place the fish in a bowl & pour the lime juice over it. Turn the fish in the juice. Season with Salt & Pepper. Cover and leave in a cool place for 15-30 minutes
- Add the oil to the baking tray. This saves having to wash extra pans! On the hob, add the garlic, onion and peppers to the baking tray and gently for a few minutes until the onion has softened.
- Cover with foil and place in the oven for 20 minutes or until the fish is tender.
- Garnish with lime wedges and fresh herbs to serve.
