Ingredients
Donegal Seafood Dressing

ml
fish sauce

tbsp
freshly squeezed lime juice

tsp
honey

Splash rice wine vinegar

tbsp
Finely chopped shallots & parsley.

tsp
each minced red chilli & garlic.
(Be carfeful & make sure you wash your hands after handling the chilli.)

Crab Meat

1 Lemon
(quartered for serving)

1 Celery Diced

fresh dill chopped

pasta - optional

Rapeseed oil

8 Cherry tomatoes
(halved)

Petit Pois - peas

Iceberg Lettuce

Ground black pepper & sea salt to taste
Instructions

Heat a pan & add 2 tsp Rapeseed oil
-
Add the prawns & stir-fry for 2 minutes until cooked. Remove and allow to cool.

If adding pasta to the salad, cook in a pan of boiling water. Usually around 5 minutes. Drain and allow to cool.

Depending on the crab you have - if it is fresh from the port, then they will require cleaning and are best cooked in a steamer for 20 minutes.
If you are buying crab in the supermarket - it could be crumbed or imitation crab that is cut into bite sized.

This recipe is also great with salmon!

Pre-cook the Petit Pois in boiling water - these only take a minute or two
If you have some sliced green beans, these are great chopped in to the salad.

Assemble your salad with some iceberg lettuce, cherry tomatoes, peas, green beans, pasta, and seafood.

Season to taste with ground black pepper & sea salt.

Drizzle the Donegal Seafood Dressing over the salad & serve with a wedge of lemon or lime.
