Couscous Salad

Couscous Salad is a great side salad to add to any meal! Or as a meal on its own!

Ingredients
  • 2 cups Couscous
  • 1 bunch scallions, trimmed & chopped finely.
  • 1 small green pepper, cored, de-seeded & chopped.
  • 4 inch piece cucumber, chopped.]1 can chickpeas, rinsed & drained.
  • Pomegranate seeds.
  • Salt & pepper.
Instructions
  1. Dressing: Finely grated rind of 1 orange. 1 tbsp chopped fresh mint 1 tub fat free natural yoghurt. Put the couscous in a bowl & cover with boiling water. Leave it to soak for about 15 mins to swell the grains, then stir with a fork to separate them. Add the scallions, pepper, cucumber, chickpeas to the couscous, stirring to combine. Season well with salt & pepper. To make the dressing, mix the orange rind, mint & yoghurt. Pour over the couscous mixture & stir well. Scatter the pomegranate seeds to serve.
