Chicken Kebabs

Ingredients
  • 1/ 2 cup rapeseed oil
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 3 garlic cloves, crushed
  • Freshly ground black pepper
  • Mix the Marinade together
    Ingredients for the Kebabs
  • 4 Fillets of Chicken
  • 3 Peppers
  • 1 Red Onion
  • 4 Cherry Tomatoes
Instructions
  1. Cut the chicken pieces into chunks. Cut red, green, & yellow peppers into equal sizes. Chop red onion. A cherry tomato for each skewer. Mix all the ingredients for the marinade in a bowl. Pour into a ziplock bag and add the chicken pieces. Leave for at least an hour, but preferably overnight, to allow the flavours to infuse. Use the marinade to baste, while grilling on the BBQ. Skewer the chicken, peppers and onion with a cherry tomato to top. Place on a heated BBQ and turn frequently to avoid burning. Baste continuously to avoid drying out.
