Ingredients
  • Low Fat Spray
  • 300 g Carrot
  • 400 g Butternut Squash (peeled & chopped)
  • 1 tsp Curry Powder
  • 1.2 l Chicken/Vegetable Stock
  • ½ tsp Toasted Cumin Seeds (grounded)
Instructions
  1. Heat pan & spray oil.
  2. Add carrots, squash & curry.
  3. Stir fry for 3 mins.
  4. Add stock & bring to the boil, reduce heat & simmer for about 20 mins until vegetables are soft.
  5. Add toasted cumin seeds & blend.
